Like yourself I testdrove a 3.0 Automatic and also a 2.5 manual, finally choose to go with the 3.0 manual. The sound from the 2 engines is the same as far as I could tell. Personally I felt a big difference in performance: the one thing I disliked about the 2.5 is that trying to accelerate at 100km/h,60mph in 5th gear resulted in a frustrating waiting experience for the car to get up to speed.
The 3.0 is and feels more powerfull, no matter which gear or RPM it just has more to go on.
I was initially going for the 2.5 but after the testdrive of the 3.0 I personally could not go back to the 2.5.
