Does anyone know where the temperature sensors are on the S-type Jag? I take it that there are two (one for inside and one outside).

Bit late, but there should be three sensors:
1) for outside ambient: behind radiator grille
2) for inside: behind little grille somewhere on facia (dash/console)
3) solar sensor (just to be a bit cleverer) on centre demist grille facia top.
